“What’s the hardest cake you’ve ever made?”
That’s a common question I usually hear when people find out I decorate cakes for a living. I’ve built wide cakes, tall cakes and unique shaped cakes. But this cake last week nearly had me in tears…
Looks simple enough right? That’s what I thought when the client requested it. And silly me agreed to do it with a light vanilla cake. How hard can it be? It’s still a standard shape.
Oh but it was challenging. The height to depth ratio of a piano is not much when you reduce it down to cake size. In other words, the cake was tall and skinny and did not have much of a base. Which caused it to actually collapse when I was building it. Plus the soft sponge texture of the cake did not help structurally either!
I was almost ready to throw in the towel and call the client to insist that it had to be a mud cake when I decided to give it one last try and to inject lots of support dowels in it. Thankfully, the ganache held it all together and it arrived at the venue in one piece. I even gave the cake a shake every few hours in the days leading up to delivery just to make sure it would hold together in the car. Yes I was paranoid. But what doesn’t kill us makes us stronger right? In this case I walked away with lots of important lessons of things not to do!
